Blue Ridge CTC Programs Partner with Delicious Results

Martinsburg, WV. The Blue Ridge CTC Academy of Hospitality and Culinary Arts and the Blue Ridge CTC Agribusiness Program combined efforts this fall, growing and processing a variety of crops that were used to inspire meals prepared in the Bruin Café and the Bruin Express Food Truck.

As part of the curriculum, the Agribusiness Program raises a variety of crops inside the large greenhouse located on the Main Campus in Martinsburg, WV. This year, the Culinary Academy made use of the greenhouse, producing a variety of crops which included tomatoes, heirloom tomatoes, banana peppers, poblano peppers, jalapeno peppers, cayenne peppers, cucumber, leaf lettuce, romaine lettuce, buttercrunch lettuce, spinach, kale, bok choy, beets, pansy’s and a selection of herbs.

“It has been nearly twenty years since I last worked in the horticulture industry. It has been an exciting opportunity to get my hands back in the dirt,” said Chef John Lane. “Using my degree from Ohio State University College of Agriculture, I have used the farm-to-table concept to incorporate crops raised in the greenhouse in dishes prepared in the Bruin Café. In addition to using fresh produce in salads and prepared meals, the culinary team has preserved beets and cucumbers by pickling for later use.”

Thanks to Chef Lane, the Bruin Café relied solely upon tomatoes and peppers produced in the greenhouse to prepare meals and sauces for use at a later date. Chefs made use of the banana peppers, producing 6 gallons of pepper sauce for signature dishes available from the Bruin Express Food Truck. In addition, the greenhouse provided a supply of herbs to the Main Campus Bruin Café from July through October 2020.

The abundance of crops harvested continues to support the Bruin Café throughout the Fall 2020 semester. When visiting the café, customers can enjoy a delicious salad, showcasing the many lettuce greens harvested by students. Visitors may also purchase pickled cucumbers, grown and prepared by the College.
