Blue Ridge CTC Expanded Services with new Food Truck Operations
Martinsburg, WV. The Blue Ridge CTC Academy of Hospitality and Culinary Arts has expanded their services and is excited to begin serving members of the community using the new Bruin Express Food Truck. Blue Ridge CTC offers a variety of culinary training programs, including the Catering and Hospitality Management program. In an effort to meet the growing demand for Food Truck businesses, this program provides students the opportunity to receive classical cooking and baking techniques, while also gaining hands-on experience developing the menu for the Bruin Express Food Truck.
The menu items of the Bruin Express vary, but recent collaboration between the Culinary and Mechatronics departments resulted in a permanent addition: a new Bruin Express Food Truck Cookie. Steve Weiss, Associate Dean of Hospitality and Culinary Arts, and Chris Sibole, Engineering Program Lab Technician, designed a cookie cutter in the shape of the food truck. Sibole used Inventor, a computer aided-design software program, to create six prototypes before perfecting the design. Using a 3D printing machine, it took about 12 hours to create one prototype. Once the prototype was perfected, culinary students prepared dough and began producing the cookies.
Chef Weiss said that the food truck and marketing were the inspiration for the cookie.
“When creating a cookie cutter to market a business, I look toward a design that focuses on the brand. Using a cute and tasty incentive to drive customer interest may leave a lasting impression,” Weiss explained. “The backside of the cookie is dipped in dark chocolate. We felt it added depth and richness to the cookie.”
The Bruin Express Food Truck provides a fast-paced learning environment for students while serving a unique lunch menu to the community. Currently, the Bruin Express is operating between campus locations, but is also available to be reserved for organizational events.
